Courses are taken together as a term long sequence. Child Development covers prenatal development through the toddler years. Parenting Skills covers parenting techniques which encourage sound physical, social/emotional, intellectual, and moral development of children. Entry level to Early Childhood Education 1.
Pre-requisite: Maintain a C in Child Development to progress

*85032110 Early Childhood Education 1 (ECE 1)
(10-12) 1 credit
Prepares students for work in the field of childcare or child related occupations. Students will take the 20 hour Child Care Training Course and may opt to take the certification test offered through DCF. Students will also become certified in First Aid and Infant/Child CPR. Skills in lesson planning using all curriculum areas are taught. Supply list provided by teacher. Optional certification fee.
Pre-requisite: Minimum of C in Child Development/Parenting Skills, application and teacher approval.

*85032120 Early Childhood Education 2 (ECE 2)
(10-12) 1 credit
Prepares students to work in the Thunderland Preschool lab by planning and following through with developmentally appropriate lessons. Students learn organizational and record keeping skills, as well as basic use of office equipment. The 10-hour Preschool Appropriate Practices course is taught through DCF. Students may opt to take the certification test. Supply list provided by teacher. Optional certification fee.
Pre-requisite: Minimum of B in ECE 1.

(10-12) 1 credit
Final vocational completer course in the Early Childhood Education series required for Gold Seal. Students continue hands on lab experience with community preschoolers. Students complete portfolio projects that may lead to a 3-hour college credit through PCC. The 10-hour Behavioral Observation and Screening course is taught through DCF. Students may opt to take the certification test.
Cost of materials fee: $10. Optional certification fee.

Students may continue their course of study by working at a local elementary school with
Kindergarten teachers to gain additional experience in a classroom environment.
Completing college text reading and completing essays, with approval by professor, may
earn an additional 3-hour college credit through PCC.
Pre-requisite: Minimum Gold Seal candidate; application & teacher approval

85003990 Principles of Food

An introduction to nutrition and wellness. Students will cover the relationship between the basic principles of food preparation, the selection and storage of food and various food preparation techniques. Entry level to Culinary Operations 1.
Pre-requisite: Maintain C in Nutrition in order to progress.

*85152100 Culinary Operations (Foods 1)
(10-12) 1 credit
Introduction to culinary arts. Students learn techniques to precost and provide nutritional meals utilizing safe and sanitary procedures for production and storage of foods. Students provide catering services.
Pre-requisite: Minimum of B in Nutrition/Principles of Food. Teacher approval.

*85152200 Culinary Operations (Foods 2)

Maintenance of the Stable Restaurant, a student managed/operated facility. Students develop skills involved in planning and preparing meals, budgeting and wage earning.
Pre-requisite: Minimum of B in Foods 1 and teacher approval

*85152300 Culinary Operations (Foods 3)
(11-12) 1 credit
This course is a continuation of Foods 2 and incorporates more advanced techniques and management skills. This course is the completer for the Gold Seal endorsement in Food Production.
Pre-requisite: Minimum of B in Foods 2 and teacher approval.

85063100 Fashion Production 1
1 credit
Students will develop competencies in sewing machine and fashion production
equipment operation. Students will also cover basic color and design principles
as they apply to fashion production and receive beginning instruction in
industrial embroidery machines.

85063200 Fashion Production 2
(9-12) 1 credit
Students will refine their clothing construction and employability skills as they prepare to enter the world of work in clothing related occupations. Students will be involved with the operation of the School Based Enterprise, Thunder Threads, in the production of embroidered fashion items.
Pre-requisite: Minimum of B in Fashion Production 1 and teacher recommendation.

85063300 Fashion Production 3
(10-12) 1 credit
Students will continue to refine fashion production skills and assets for employability. Students will be exposed to advanced technique application in fashion production. They will also continue involvement in the operation of the School Based Enterprise, Thunder Threads, in the production of embroidered fashion items.
Pre-requisite: Minimum of B in Fashion Production 2 and teacher recommendation.
